This Denver omelet casserole is full of the classic flavors of green peppers, ham, cheese and onions all in an easy to make egg bake. This baked omelet is great for brunches, holiday breakfasts, or having on hand for busy mornings!

A traditional Denver omelet (also called a western omelet) is a delicious fluffy omelet stuffed with diced ham, veggies and cheese. It has always been one of my favorites! This casserole takes the classic omelet flavors and combines them into an easy to make baked version that is amazing. No need to stand over a hot stove to feed the whole family, you can pop this casserole in the oven for an easy breakfast that everyone loves!

This is also the perfect recipe to make ahead for busy weekdays or special occasions like Christmas morning!

What to serve with this egg casserole?

This baked omelet is great for a family breakfast, holiday breakfast, or brunch. It’s even great as dinner! If you want to serve it up as a complete meal here are some great ideas for side dishes-

-Hash browns or Air Fryer Breakfast Potatoes or Fried Potatoes are a great addition.

-Fresh fruit or fruit salad add a nice light flavor!

-Green salad (a great brunch or dinner option) I love to make spinach salad with strawberries.

-Toast, biscuits, rolls or croissants

-Bacon or sausage links

-Muffins or pastries

FAQ-

Can I use different peppers?

If you don’t love green bell peppers you can easily swap them out for one of their sweeter counterparts. We love red bell pepper in this casserole, orange peppers and yellow peppers also add delicious sweetness. If you just generally don’t like peppers you can just omit them all together!

What kind of ham is best?

When I’m just making this for a typical week I buy the pre-packaged diced ham from the grocery store. But this is also a great way to use up leftover ham after the holidays! Just chop it into little bites before adding to the casserole. If you can’t find diced ham you can also use deli ham slices, just chop them into small pieces before adding to your eggs!

Can I use different cheese?

Absolutely! I love cheddar cheese for this recipe but you can easily swap it out for your favorite. Pepper jack is a great way to add a little spice, Monterey jack adds a nice mild flavor or you can even use a blend of a few different cheeses.

Can I bake this in a skillet?

Yes! If you want to do less dishes an easy way to do that is to bake this in a cast iron skillet. Once your veggies are cooked you can add your egg mixture to the skillet and pop it in the oven. Your baking time may vary so make sure to check on the casserole as it bake!

Here’s what you’ll need for this recipe-

10 Large Eggs

1/2 Cup Heavy Cream

1 Tbsp Butter

1 1/2 Cup Shredded Cheddar Cheese

1 1/2 Cup Diced Ham

1/2 Cup Diced Green Bell Pepper

1/3 Cup Diced Onion

Salt & Pepper to taste

Here’s how to make this Denver Omelet Casserole-

First preheat the oven to 400, then butter or spray with non stick spray an 8×8 square baking pan.

Then place butter in a large skillet and melt over medium heat. Add in diced onions and peppers and cook for 5-7 minutes or until translucent.

Crack eggs into a large bowl, add in heavy cream, and a pinch of salt and pepper. Whisk until well blended.

Add 1 cup of shredded cheese and cooked veggies and ham pieces to the egg mixture and stir until everything is evenly mixed.

Pour the egg batter into your prepared pan. Top with remaining 1/2 cup shredded cheese.

Place in the oven and bake for 30-35 minutes or until the cheese is melted, edges are golden brown, and the middle is set.

Allow to cool slightly before cutting. Serve warm.

Store any leftovers in an airtight container in the refrigerator.
